1 (15 ounce) can Garbanzo (chickpeas), drained and rinsed
1 (15 ounce) can Kidney beans, drained and rinsed
1 (15 ounce) can Black beans, drained and rinsed
1 (15 ounce) can Red beans, drained and rinsed
1 (15 ounce) can Pinto beans or Black-eyed Peas, drained and rinsed
(Most of the time, I make sure I get the organic brand of beans.)
Put all beans in a bowl. I don't rinse them, but you can if you wish to. Then, make dressing:
1 small white onion, sliced into thin rings (yellow onion is too strong)
3/4 cup white sugar (I used raw sugar)
2/3 cup distilled white vinegar (I used apple cider vinegar)
1/3 cup vegetable oil (I used extra virgin olive oil)
1/2 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon celery seed
Shake in bottle, then pour on the 5 beans in bowl. Stir until all is coated and well mixed. Best made the day before and served cold.
